The DIAA and the Australian Specialist Cheesemakers' Association are hosting a one-day seminar with keynote speaker David Lowry from Ecolab. Topics will include proper cleaning practices and cleaning chemicals, as well as Italian cheesemaking, latest cheese cultures and adjuncts and quality and safety.
